Watermelon Radish

Watermelon radish (often a green meat / beauty heart type) shows pale green skin and shocking magenta flesh when sliced—milder and sweeter than hot red spring radishes, with a dense winter-radish texture. Size is larger than Cherry Belle; flavour is gently peppery. The visual is the main restaurant draw. Shave thin for salads and crudo; pickle wedges to keep colour. Cook only lightly if at all—heat dulls the magenta show. Peeling optional; contrast of green rim and red centre is the point.
