Smyrna is a large-fruited quince associated with Turkish/Aegean horticulture—rounded to oblong yellow fruit, strong perfume, and traditional paste and spoon-sweet uses. Cooked colour runs lovely rose. Suits hot-summer Mediterranean patterns. Make thick preserves; serve with cheese or yogurt. Trees need water to size fruit despite drought tolerance of the species. Historic name links to Izmir trade. Core and cook long enough to soften granules.
