Pharaoh is a commercial meat line of Japanese coturnix selected for wild-type brown plumage and improved carcass weight. Flavour stays mild-game and tender, with slightly more breast meat than unimproved layers—favoured by growers selling to restaurants. Grill spatchcocked for even colour; the skin browns attractively. Pharaoh is what many “jumbo” or meat quail catalogues mean when they want a production bird that still looks like a quail.
