Jumbo Coturnix designates large-bodied Japanese quail selected for maximum meat yield—noticeably bigger breasts and thighs than layer-type coturnix. Flavour remains mild-game; the extra size makes a more satisfying main-course bird when serving one per person. Spatchcock to cook evenly; the thicker breast still wants high heat and a short rest. Preferred by meat growers and chefs who found standard quail too tiny for mains.
