California Quail
A tier
California quail (Callipepla californica) is the state bird with a forward topknot, found in chaparral and suburban edges of the West Coast. Meat is lean, delicately flavoured, and slightly more aromatic than farmed coturnix when wild-taken. Pan-roast with sage and California olive oil, or grill skewered breasts. Portions are small; plan multiple birds. Legal harvest and careful field care determine quality more than any kitchen trick.
