Bobwhite is the classic North American quail of fields and pine woods, with whiter breast meat than coturnix and a sweeter, cleaner game flavour. Birds are often hunted or farm-raised for release and table; wild ones taste more intense. Cook quickly—grill, pan-roast, or smother in Southern gravy traditions. Overcooking is the enemy.
