Opuntia is the prickly pear cactus genus—flattened pads (nopales) and colourful oval fruits (tunas) covered in glochids that demand respect. Fruit flesh is juicy, seedy, and melon-berry mild from green to deep purple-red. Arid Americas origin; now Mediterranean and global dryland crop and feral plant. Burn or scrub glochids; peel fruit carefully. Juice, agua fresca, jelly, and fresh slices are classic. Pads cook as green vegetable separately. Seeds are crunchy and numerous—strain for smooth drinks. Gloves are not optional.
