Trisopterus luscus is pouting or bib—a small North-East Atlantic gadoid with soft, mild white flesh and a short shelf life when fresh. It is an inshore fish often landed as bycatch or small-boat catch, excellent fried whole when ultra-fresh but quick to soften. Flavour is clean and light. Best pan-fried or deep-fried the day of purchase; also useful for fish soup bases if cooked promptly. Do not plan long storage. Pouting rewards zero-waste cooking of small whole fish rather than ambitious loin presentations.
