Norway Pout
C tier
Norway pout (Trisopterus esmarkii) is a small northern gadoid used mainly for fishmeal and industrial processing rather than premium table fish, though it can appear in mixed whitefish contexts. Flesh is soft, mild, and fine—better as mince, meal, or thrifty frying fish than as centre-of-plate loins. It is a different species from common pouting but shares the soft small-gadoid character. If sold for food, use promptly in fishcakes, petes, or fried small whole fish. Do not expect restaurant-grade fillets. Most supply still goes to reduction; food-grade Norway pout is a niche.
