Red Bliss is a round red-skinned, white-fleshed waxy potato that holds shape for boiling, potato salad, and steaming on steam tables. Thin bright skin looks festive in a bowl of cold salad and needs little peeling. Low starch means creamy slices rather than fluffy mash—over-mashing turns pasty and gluey. Boil with skins on; dress while warm so seasoning sticks. Also good roasted at high heat for blistered skins. A US market staple among reds, sometimes sold simply as “red potatoes” without the cultivar name on the bag.
