Boletus edulis is the classic porcini/cep—thick stem, sponge pores instead of gills, nutty meaty flavour that defines European wild mushroom luxury. Fresh or dried, it anchors risotti and sauces. Mycorrhizal with trees; not easily farmed. Sauté fresh; soak dried for deep stock and slices. Avoid waterlogging the sponge. The reference bolete of fine cooking.
