Citrus maxima (pomelo/pummelo) is the largest citrus species—thick pith, huge segments, mild sweet to sweet-tart juice vesicles, and ancestral parent to grapefruit. Flesh may be white or pink; bitterness is usually lower than grapefruit. Southeast Asian food culture treats pomelo as a festive and salad fruit. Supreme large segments into Thai yum salads, eat fresh, or juice mildly. Thick peel can be candied or braised in some Chinese preparations. One fruit serves many.
