Santa Rosa is a Japanese-type plum (Prunus salicina heritage) with crimson-purple skin, amber flesh often streaked red near the skin, and a bright sweet-tart bite that defined California fresh plums for generations. Fruit is round and juicy; the pit is semi-freestone when fully ripe. Aroma is lively and floral-tart rather than prune-like. Peak for fresh eating, galettes, and quick skillets with black pepper or balsamic. Not a drying prune plum—use European types for that. Still a flavour reference even where newer firm cultivars dominate long-distance packs.
