Pleuronectes platessa is European plaice—the large, orange-spotted right-eyed flatfish of the North Sea and adjacent waters. Flesh is soft, moist, and mild with larger flakes than sole, excellent fried, baked, or served whole. The distinctive spots help identify genuine plaice on the slab. Classic British and Dutch cookery fries plaice in batter or pan-fries on the bone. The flesh is lean and delicate; avoid aggressive flipping and overcooking. Fresh plaice should smell clean and show bright orange spots on a brownish upper side.
