Amur pike (Esox reichertii) is the East Asian pike of the Amur basin—similar lean white flesh and bone structure to northern pike, used in Russian Far East and Chinese border cookery. Expect firm flakes and clean flavour from cold rivers when fresh. Fillet with the same Y-bone care, or mince for balls and dumplings. Braise or pan-cook with regional aromatics—soy, ginger, or sour cream traditions depending on side of the border. Rare in Western shops; a regional wild species.
