Mondain is a very large French utility pigeon bred for maximum squab weight and broad breast meat. Young birds deliver restaurant-scale portions with rich, dark flesh and enough fat to self-baste under high heat. One Mondain squab can satisfy a main course more easily than petite fancy breeds. Roast simply with thyme and garlic; the meat needs little disguise. Cornerstone of French commercial pigeonneau alongside other heavy utility types.
