Rojo Brillante is Spain’s flagship persimmon—bright red-orange elongated fruit from Ribera del Xúquer and related areas, often sold firm after CO2 deastringency as “Persimon” brand style fruit. Flavour is sweet and clean; untreated fruit is astringent until soft. The cultivar transformed Spanish kaki into a major European export crop. Eat firm treated fruit out of hand or ripen soft for spoon desserts. Look for deep colour and undamaged skin. Peak European winter supply often means Rojo Brillante in the bin.
