Hachiya is the classic astringent acorn-shaped persimmon—deep orange, elongated, and inedible until fully soft and translucent-jelly inside. At peak it is intensely sweet, honeyed, and spoonable; any firmness means mouth-puckering tannins remain. It is the traditional baking and pudding persimmon of many American kitchens. Scoop into breads, cookies, mousses, and frozen desserts. Ethylene and time finish ripening at home. Never judge by colour alone—softness is the only safe cue for astringent types.
