Fuyu is the world’s best-known non-astringent persimmon—squat tomato-shaped orange fruit you can eat crisp like an apple, with sweet mild flesh and no need for jelly-soft ripening. Skin is edible; seeds are few or absent in many commercial lots. It converted shoppers who only knew puckering wild or Hachiya types. Slice into salads with greens and citrus, snack out of hand, or roast lightly. Soft Fuyu is still edible but the crisp identity is the point. Store cool; ripe fruit softens gradually.
