Balkhash perch (Perca schrenkii) is a Central Asian perch from Lake Balkhash and nearby waters—similar culinary profile to European perch with firm, mild white flesh suited to pan-frying and simple lake cookery. It is a regional species rarely seen in Western retail under its own name. Treat fillets like other true perch: crisp skin, butter, lemon, minimal fuss. Sustainability and local fishery rules matter in its native range. Outside Central Asia it is mostly a curiosity for species-aware cooks and ichthyological menus.
