Spice
Tellicherry
S tier
Tellicherry black pepper is a large-berry grade historically associated with the Tellicherry (Thalassery) coast of Kerala—bold aroma, deep heat, and essential-oil richness that made it a benchmark premium black. Modern “Tellicherry” often denotes size grade (e.g. TGSEB) as much as precise terroir, but top lots still aim at Malabar character. Grind over steaks, finish pasta cacio e pepe style, or use whole in pickling. Worth buying whole from reputable spice merchants. The grade rewards dishes where pepper is central.
