Black Peppercorn

Black Peppercorn

S tier

Black peppercorns are nearly ripe berries cooked and dried with the outer fruit layer intact, yielding the dark wrinkled corn and full aromatic heat of classic pepper. They are the default table and kitchen pepper worldwide. Quality shows in dense, fragrant corns with high essential oil—not dusty light berries. Crack or grind to order for steaks, sauces, and finishing. Tellicherry-grade large blacks are a premium subset. Avoid stale preground for any dish where pepper is tasted.
