White Peach

White peach is the flesh-colour class of Prunus persica with pale ivory to pink-tinged flesh, typically higher sugar perception and lower acid than yellow types, and a floral, almost rose-water perfume when ripe. Skin may be pale with pink blush; many modern white cultivars are freestone melting types sold as premium fruit. Flavour collapses if picked rock-hard and never recovers fully. Eat out of hand or in raw applications—salads, burrata plates, chilled soup—where perfume is the point. Japanese and Chinese white peaches set a global quality bar; Western markets now stock named whites in season. Brown quickly when cut; acidulate lightly if plating ahead.
