Elberta is a historic yellow freestone with large fruit, red-blushed golden skin, and firm flesh that shipped better than many melting contemporaries of its era. Flavour is classic peach—sweet with moderate acid—though modern dessert types often outshine it raw when tree-ripe. For decades it was the American peach name shoppers recognised on crates and cans. Still appears in older orchards, U-pick, and nostalgia marketing; cooks use it for pies and preserves where reliable size matters. Not every yellow freestone sold as “Elberta-type” is true Elberta. Best when fully coloured and fragrant rather than board-hard.
