Garden peas are the classic shelling type—fibrous outer pods discarded, sweet round seeds eaten fresh, frozen, or canned. Peak flavour is hours after picking as sugars convert to starch. Bright green when young; starchy if left too long on the vine. Shell and boil briefly; butter and mint are traditional. Frozen peas often out-taste tired “fresh” imports. Mash for soups and side purées. The default mental image of a pea. Waste less by matching cut size to Garden Pea's natural Sweet Seeds; uneven pieces are the usual reason Buttered Peas disappoints.
