Wrinkling signals maturity more than perfect smooth skin. Buy heavy wrinkled fruit; light smooth fruit may be hollow or underripe. Scoop seeds and all for authentic texture. Freeze pulp in ice trays. Cool subtropical highland production often beats hot lowland quality.
