Chukar is a red-legged partridge relative of rocky hills from the Middle East to Central Asia, widely introduced in western North America. Meat is lean, mild-game, and slightly firmer—excellent grilled or roasted when birds are young. Wild chukar from steep country can be more athletic; farm birds milder. Pair with lemon, oregano, and olive oil for an eastern Mediterranean tilt.
