Texture is fine for roasting and baby-root programmes when harvested smaller. Flavour is aromatic and dessert-adjacent after frost. Roast whole small roots or baton large ones. Good for pureed soups without stringiness if not oversized. Preferred by some growers for slot-specific maturity.
