Italian flat-leaf parsley is the cook’s workhorse green—broad, flat leaflets with a clean, peppery-herbal bite stronger than curly garnish types. Stems carry flavour too and belong in stocks; leaves finish sauces, salads, gremolata, and salsa verde without the frilly look of moss-curled parsley. Prefer it whenever parsley is meant to taste of something, not only decorate. Chop just before serving; long heat dulls the top notes. The default professional bunch in most European and American kitchens.
