Scarus ghobban, the blue-barred parrotfish, is a widespread Indo-Pacific species often seen in markets where tropical reef fish are sold whole. Flesh is white and firm; size varies with age and fishing pressure. Colourful skins make for dramatic fried whole presentations. Cook simply with citrus and chilli. Confirm local stock health—broad distribution does not mean every reef can spare heavy take.
