Greek oregano (O. vulgare subsp. hirtum) is the high-carvacrol culinary oregano of Greek and wider Mediterranean cookery—hot, peppery, and resinous, far more pungent than bland “wild marjoram” sold as oregano. Essential on grilled meats, tomato sauces, and feta. Dried often intensifies; crumble between fingers. Prefer Greek-grown or hirtum-labelled plants for true flavour.
