Food-grade orange blossom water is bitter-orange flower hydrosol packed for the kitchen: citrus-honey, slightly green, strong. It is the Maghrebi and Levantine pastry bottle—makroud, qatayef, ghribia, a drop in a yogurt cake or a fruit salad. Perfume-grade flower water is not a substitute. Taste before you pour; brands range from shy to cologne. Add it late. This is the default leaf when a recipe says orange flower water or orange blossom water without naming neroli.
