Lates niloticus is Nile perch—a large African freshwater predator with thick, mild white fillets that became a major export from Lake Victoria. Flesh is moist, large-flaked, and mild, similar in use to firm white ocean fish though fully freshwater. Bake, fry, or stew robust pieces. Ecological controversy follows the species’ introduction to Victoria; prefer transparent fisheries. Thick fillets need even cooking—finish in the oven after searing. A crowd-pleasing mild fish when fresh and not refrozen to mush.
