Nigella sativa yields the small black teardrop seeds known as kalonji or black seed—oniony, oregano-like, slightly bitter—essential on naan and in Bengali five-spice. Not the same as black cumin (Bunium) or onion seed misnomers alone. Toast lightly to wake aroma; raw seeds can taste harsh. Species is the true culinary nigella of South Asian and Middle Eastern pantries. Store whole; oils go rancid in old jars.
