Independence is a mid-season yellow freestone nectarine selected for bright red skin, good size, and a clean sweet finish with enough acid to stay interesting. Flesh is yellow and relatively firm at commercial pick, then yields juice as it finishes ripening. It sits in the workhorse tier of California-style nectarines rather than white luxury or ultra-late cling groups. Strong for fresh boxes, fruit salads, and quick skillets with butter and herbs. Grilling concentrates sugars and chars the smooth skin appealingly. Choose fruit that smells like nectarine at room temperature; cold mute aroma is common in chain retail.
