Welsh Mountain mutton comes from mature small hill sheep of Wales, slow-grown on acidic upland pastures. The meat is fine-grained for mutton, with a sweet-savoury depth that Welsh cookery traditionally used in cawl and family pot dishes. Because pure mountain carcasses are small, joints are intimate rather than banquet-sized. Slow moist heat brings out gelatinous richness without greasiness. Provenance-led Welsh butchers sometimes age mountain mutton briefly to soften the chew.
