Texel Cross mutton is mature meat from Texel-sired animals held beyond commercial lamb age—or cull ewes with heavy Texel influence. Extreme muscling in youth can become dense, high-yielding mature meat with relatively less bone waste. Cook low and slow or with careful moisture: the lean, blocky conformation dries if blasted with dry heat. When braised, Texel-cross mutton offers thick slices of dark meat ideal for contemporary restaurant “mature sheep” dishes that want structure on the plate.
