Scottish Blackface mutton is the mature expression of Scotland’s great hill breed—compact, hardy animals that spent years on heather and wet hill grasses. Older ewes and wethers carry a powerful, aromatic mutton character central to traditional Scots cookery. Use for broths, stovies-adjacent stews, and long-braised shoulder. The fat is firm and flavourful; some recipes render a portion for cooking potatoes and onions. Properly treated, Blackface mutton is among the most distinctive sheep meats of northern Europe.
