Mature wether mutton is meat from castrated male sheep kept beyond lamb age—sometimes as wool producers or unfinished hill drafts held over. Without breeding cycles, wethers can lay more even finish than old ewes, though flavour still deepens with age. Butchers often prefer wether mutton for roasting joints when animals are well finished: strong but cleaner than some cull ewes, excellent for traditional Sunday mutton, Irish stew, and Middle Eastern slow dishes. Dry ageing of large legs intensifies savoury notes.
