Sprouting mung denotes seed lots selected/cleaned for high germination—producing the familiar white-stemmed green-tipped bean sprouts of stir-fries and pho garnishes. Flavour of sprouts is juicy, grassy, and crisp raw or flash-cooked. Sprout at home in jars or buy fresh sprouts; cook briefly to retain snap. Food safety: refrigerate and use promptly.
