Moong dal is split (often skinned) mung—yellow when decorticated—cooking to soft, comforting dal faster than whole moong. Mild enough for convalescent food, khichdi, and everyday tadka dal. A cornerstone Indian pantry item. Simmer to soft; temper with cumin and asafoetida. Khichdi with rice is classic. Do not expect salad firmness—soft is correct.
