Black mung (not urad) refers to dark-seeded mung variants in specialty trade—small beans with mung’s mild character and darker coats. Confirm labelling against Vigna mungo (urad), which is a different species often also called black gram. Cook as whole mung if true radiata; do not assume urad fermentation behaviour.
