Meat
European Elk
A tier
European elk is the common name in Britain and much of Europe for Alces alces—the same species North Americans call moose. Scandinavian hunting cultures supply most commercial and household European elk meat. Flavour is deep and clean with forest notes; fat is minimal. Classic Swedish and Finnish preparations include stews, meatballs from mince, and roasted haunches from younger animals. Autumn hunting seasons define availability.
