Canadian moose roam from Newfoundland to the Yukon, supplying regulated hunter meat that defines much of rural Canadian wild protein. Provincial wildlife agencies manage seasons; meat rarely enters large retail but fills household freezers. Expect dark, lean, iron-rich meat excellent as bourguignon-style braises, sausages, and Sunday pot roasts with bacon larding. Newfoundland and Quebec traditions are especially strong. Proper cooling after harvest is critical in early autumn hunts.
