Alces alces is the scientific name for moose (called elk in Europe), the largest deer, ranging boreal forests of North America, Scandinavia, and Russia. As a variety it labels true moose meat when sold under taxonomic or generic game documentation. Meat is very lean, coarse-grained relative to small deer, and richly flavoured—superb as slow roasts, stews, and mince when young animals are selected. Mature bulls can be tough; cows and young bulls are preferred table animals where hunting law allows.
