Simmental

B tier

Simmental is a large dual-purpose breed producing useful milk volumes with balanced solids while retaining beef value. Milk is milder and less specialised than pure dairy Holstein or Jersey lines, but perfectly serviceable for drinking, yoghurt, and many cheeses. In alpine and central European farms Simmental milk still enters cheese cooperatives. Expect clean, slightly sweet milk without extreme creaminess. Dairy-focused selections improve lactation; beef-focused herds give less milk emphasis.
