Sarda sheep dominate Sardinia’s pastoral landscape and feed an island economy of pecorino, ricotta, and whey products. Milk is high in solids, aromatic from Mediterranean scrub grazing, and versatile from fresh fiore sardo-style pastes to long-aged grating cheeses. Daily ricotta from whey is as culturally central as the primary cheese wheels. On the table Sarda milk appears as warm ricotta with honey, salty aged pecorino over pasta, and soft acid cheeses. Flavour carries thyme, rockrose, and dry grass when flocks range free. Italian and export markets recognise Sarda as one of the great Mediterranean dairy sheep behind both DOP and everyday island dairy.
