Saanen is the large white Swiss dairy goat that dominates commercial goat-milk volume worldwide. Milk is relatively mild and pale for goat’s milk, with lower “goaty” notes when animals are well managed—ideal for drinking, yoghurt, and fresh cheeses that should not overwhelm. Industrial goat dairies favour Saanen for yield. Cheesemakers use it for chèvre, feta-style brines, and blended goat–cow products. Keep milk very cold; goat milk’s smaller fat globules stay suspended, so cream lines are subtle.
