Reindeer milk is an Arctic specialty of Sámi, Nenets, and other northern pastoralists. It is extremely high in fat and solids, produced in small amounts—does (female reindeer) give little surplus beyond calves. Flavour is rich with a sweet-gamey northern character. Reindeer milk is rarely commercial; frozen specialty products and traditional cheeses appear in tiny volumes. Culinary use is ceremonial and local more than retail. When found, treat it as an ultra-rich novelty dairy for sipping or traditional recipes, not café steamed milk.
