Pinzgauer cattle from the Pinzgau region of Austria are hardy alpine dual-purpose animals with distinctive chestnut sides and a white back stripe. Milk production is moderate with solid flavour from mountain grazing—historically feeding Tyrolean and Salzburg farm dairies rather than industrial mega-herds. Pinzgauer milk suits alpine cheeses and farmstead yoghurt when herds still lactate for dairy. Expect seasonal, forage-driven character. Outside the Alps the breed is more often raised for beef, so milk is a regional specialty.
